Below you'll find an easy recipe that you can create at home!
At MoxieLash, we don't do anything boring. Please note the pink plate, pink/peach margarita in our signature colors, and of course...the pink sour cream that was obviously essential for a pretty taco. The only thing missing at this point is edible glitter. Maybe next time.
So, send out the evites to your friends for a virtual taco night (still social distancing), throw on some party music, definitely add your best Cinco de Mayo MoxieLashes, and let's get to cooking! Below you will find a full step-by-step breakdown of everything you need to master these pretty and delicious Moxie Tacos.
Ingredients Needed for the Original Moxie Taco!
Before we begin, if you are vegan or vegetarian, you can always customize the Moxie Taco to fit your needs. We suggest a firm tofu, or other animal-free, steak-substitutes.
For the Steak:
- 1 pound Beef Top Sirloin, tenderized and diced
- 1/2 Tbsp. olive oil
- 1/2 Tbsp. apple cider vinegar
- 1 Tbsp. chili powder
- 1/2 tsp Salt and pepper
- 1 juiced mandarin orange (small one)
- 1/2 juiced limes
- 1 Tbsp. finely chopped cilantro
- 1/2 Tbsp. of garlic
- 1/3rd minced fresh jalepeno
Other Ingredients:
- Sour cream
- Pink food coloring
- Habanero sauce
- Avocado
- 1/2 cup Cotija Cheese
- 1 Tbsp red onion
- 1/2 cup diced white onion
- 1 cup diced tomato
- 1/2 diced jalapeno
- 1 Tbsp. lime juice fresh squeezed
Instructions
- For the steak, combine the vinegar, olive oil, chili powder, mandarin orange juice, lime juice, cilantro, garlic, and jalapeno into a large bowl or large plastic ziplock. Add thinly sliced tenderize steak pieces into the marinade for a few hours.
- To cook the steak, heat up a cast-iron skillet or heavy frying pan to high heat. Toss in the steak and stir fry it for 2-3 minutes.
- For your toppings, you can make your own Pico de Gallo! Simply dice your tomato, white onion, and 1/2 jalapeno, combine it with cilantro, lime juice, and garlic! Prepare your others toppings-- slice avocado and red onion, crumble the Cotija Cheese. For the pink pop, combine your sour cream with a splash of pink food die (for a pretty taco vibe).
- Steam corn or flour tortillas in microwave for 30 seconds to one minute. Now it's time to stack your Moxie Taco!
How to Stack Your Moxie Taco!
1. Lay down your flour and corn taco onto the center of a plate.
2. Add a handful of steak to the center.
3. Place a dollop of pink sour cream onto the center of the Moxie Taco.
4. Now you can sprinkle on your fresh Pico de Gallo.
5. Next, lay down a few slices of avocado and purple onion over the Pico de Gallo.
6. And then, you can crumble Cotija Cheese over that.
7. For another dose of "pretty" and spice, gently drizzle on Yellowbird Habanero Sauce (or something similar).
8. Garnish with a little fresh cilantro.
9. Yum-yum.
